BLT Burger with Fried Avocado

Ingredients
For the Fried Avocado
- 1 cup all-purpose flour
- 1 lg. egg, lightly beaten
- 1 cup panko breadcrumbs
- kosher salt
- Black pepper
- 1 avocado, sliced
- 1 Tbsp. olive oil
For the Burger
- 1 lb. ground beef
- 1 1/2 Tbsp. butter
- 3 slices cheddar
- 1 head lettuce
- 1 lg. tomato
- 3 Hamburger buns
- 1 Tbsp. mayo
- Lettuce, for serving
- Tomato, for serving
Directions
- Step 1Arrange three bowls : one with flour, one with egg, and one with Panko. Season flour and panko with salt and pepper.
- Step 2Working one slice at a time, dredge avocado in flour, egg mixture, and Panko, coating completely. Transfer on a plate until ready to fry.
- Step 3Heat olive oil over medium heat and fry avocado until golden brown, 1 minute per side.
- Step 4Make the burgers: in a large skillet, fry bacon over medium-high heat until crisp. Transfer to a paper-towel-lined plate.
- Step 5Form beef into three equal-sized patties. Season generously with salt and pepper.
- Step 6Heat a cast-iron skillet over medium-high heat and melt butter. Add burgers and cook 3 minutes, then flip. Top with cheese and cook 3 minutes more for medium rare.
- Step 7Build burgers by spreading mayo on the bun bottoms and topping with bacon, lettuce, tomato, and fried avocado.
