Ingredients

  • 1 cup white rice
  • 1 Tbsp. olive oil
  • 1 15 oz. can black beans, rinsed
  • 1 tsp. groud cumin
  • kosher salt
  • Freshly ground black pepper
  • 2 avocados, sliced
  • 1 cup Pico de gallo salsa
  • 4 oz. shredded Cheddar

Directions

    1. Step 1Cook rice according to package directions.
    2. Step 2Meanwhile, in a medium nonstick skillet over medium heat, heat oil. Add beans and cumin and season with salt and pepper. Cook, stirring occasionally until heated through, about 2 minutes.
    3. Step 3Divide beans and rice among four bowls and top with avocado, pico de gallo, and cheddar.
