Pimiento Grits With Fried Egg

Ingredients
- 3 cups water
- 1 cup corn grits or polenta
- 4 large eggs
- 1/2 cup cream cheese
- 1/4 cup drained jarred pimiento peppers
- chives, for garnish
- Salt and freshly ground black pepper
Directions
- Step 1In a medium saucepan over medium heat, whisk together water and grits. Bring to a simmer and cook until creamy, stirring occasionally, about 10 minutes.
- Step 2Meanwhile, fry eggs in a large saucepan over medium heat until whites are set and yolks still runny, 3 minutes.
- Step 3Stir cream cheese and pimientos into grits.
- Step 4Divide grits among four bowls and top with a fried egg. Garnish with chives and season with salt and pepper.
