Don't let unripened tomatoes go to waste. Roasting gives them a deeper flavor and the bread crumbs provide a contrasting crispiness.

Ingredients
- 1/4 cup olive oil
- 4 medium green tomatoes
- 1 Tbsp. balsamic vinegar
- kosher salt
- Pepper
- 1 cup fresh bread crumbs
- 1/4 cup grated Parmesan or Romano cheese
- 2 clove garlic
- cup chopped fresh basil leaves
- 2 Tbsp. fresh thyme leaves
Directions
- Step 1Heat oven to 400 degrees F. Oil a shallow 3 quart baking dish.
- Step 2Cut the tomatoes in half through the equator and arrange, cut-side up, in the prepared baking dish. Drizzle with the vinegar, then season with 1/2 teaspoon salt and 1/4 teaspoon pepper.
- Step 3In a medium bowl, combine the bread crumbs and cheese, then the oil. Toss with the garlic, basil, and thyme. Sprinkle the crumb mixture over the tomatoes.
- Step 4Bake, covered, for 25 minutes. Uncover and bake until the tomatoes are tender and the bread crumb mixture is golden brown, 10 to 12 minutes more. Sprinkle with additional basil, if desired.
