Ingredients
- cup sugar
- 2 Tbsp. cornstarch
- 1/4 tsp. kosher salt
- 3 cups heavy cream
- 2 cups whole milk
- 1 large vanilla bean
- 8 large egg yolks
Directions
- Step 1Whisk together first 3 ingredients in a large, heavy saucepan. Whisk in cream, milk, and vanilla bean. Cook over medium heat, stirring often, 4 minutes or until sugar dissolves. Gradually whisk 1 cup hot cream mixture into yolks. Whisk yolk mixture into remaining cream mixture. Cook over medium heat, whisking constantly, 8 to 10 minutes or until mixture thickens and coats a spoon.
- Step 2Pour through a fine wire-mesh strainer into a bowl, discarding solids. Cool completely. Chill 8 to 24 hours or until very cold.
- Step 3Pour mixture into bowl of an electric ice-cream maker; process according to manufacturer's instructions. Freeze 1 hour before serving. Store up to 1 week.
