Mignonette is a classic sauce for raw oysters, but is traditionally made with only shallots, pepper, and vinegar. The additions of fresh lemon zest and cucumber brighten up this old favorite.

Ingredients
- 1 cup Champagne vinegar
- 3 shallots
- 1/2 cucumber
- 1 Tbsp. sugar
- Zest of 1 lemon (1 to 2 teaspoons)
- 1 tsp. Freshly ground pepper
- 1/4 tsp. salt
- 32 oysters
Directions
- Step 1In a medium bowl, mix together the first seven ingredients to make the mignonette. Cover with plastic wrap and refrigerate for at least 1 hour or up to 1 day. Serve chilled oysters, each topped with about 1/2 tablespoon of mignonette.
