Alabama chef David Bancroft devised Bellini Moonshiners — a high-low mix of fancy champagne and Lincoln County Lightning Whiskey. Fresh peaches and basil add a taste of summer.

Ingredients
- 2 ripe peaches
- 32 basil leaves
- 1/2 cup confectioners' sugar
- Juice of 2 limes (about 1/4 cup)
- 1 1/2 cups moonshine
- 1 liter sparkling water
- 1 bottle Champagne
Directions
- Step 1In a large jug, muddle peaches, basil, and sugar using a muddler or the back of a wooden spoon. Add 4 cups ice.
- Step 2Add lime juice and moonshine, and stir well. To serve, divide mixture evenly among 8 highball glasses and top off with sparkling water and champagne.
- Step 3Garnish each glass with a basil leaf, and serve immediately.
