This spicy, Asian-inspired salad with tuna, arugula, cucumber, and brown rice works as both a main course and a gourmet side salad.

Ingredients
- 2 Tbsp. vegetable oil
- 1 fresh tuna steak
- 1/4 tsp. salt
- 1/4 tsp. Pepper
- 1/4 cup light mayonnaise
- 1 Tbsp. Asian hot chili sauce
- 1 Tbsp. fresh lime juice
- 1 Tbsp. soy sauce
- 1 Tbsp. toasted sesame oil
- 1 pinch sugar
- 6 cups arugula
- 2 cups cooked brown rice
- 1 seedless (English) cucumber
- 1 avocado
Directions
- Step 1If using fresh tuna, in 10-inch skillet, heat vegetable oil on medium-high until very hot. Sprinkle tuna all over with salt and pepper. Add tuna to skillet; cook 3 minutes per side or until browned on both sides. Transfer cooked tuna to cutting board. Thinly slice.
- Step 2In large bowl, whisk together mayonnaise, chili sauce, lime juice, soy sauce, sesame oil, and sugar. Add arugula, rice, cucumber, and avocado; toss to combine. Divide salad among 4 serving plates. Top with tuna.
