Ingredients
- 2 Tbsp. kosher salt
- 1 3/4 lb. haricots verts
- 1 large shallot
- 1/2 cup sour cream
- 1/2 cup mayonnaise
- 2 Tbsp. red wine vinegar
- 1/2 cup Finely chopped fresh parsley
- 1/4 cup finely chopped fresh basil
- 1/4 cup fresh dill
- 1 clove garlic
Directions
- Step 1Fill a large bowl halfway with ice water and set aside. Bring a large pot of water to a boil. Add 2 tablespoons salt and haricots verts. Cook until vibrant green and crisp-tender, about 5 minutes. Drain beans and immediately transfer to ice water to cool. Remove from water, blot dry, and place in a large bowl. Add shallot and toss. (Beans may be made up to 1 day ahead, and refrigerated until ready to serve.)
- Step 2To make green goddess dressing: In a medium bowl, whisk together remaining ingredients and 1 to 2 tablespoons water. (Dressing can be made up to 1 day ahead, and refrigerated until ready to serve.) To serve haricots verts, drizzle with dressing and garnish with dill.
