Ingredients
- 3 Tbsp. olive oil
- 2 Tbsp. balsamic vinegar
- 1 clove garlic
- 1 tsp. granulated sugar
- kosher salt
- Pepper
- 2 can black-eyed peas
- 2 plum tomatoes
- 1 small red bell pepper
- 1 jalapeño (seeded for less heat, if desired)
- 1/2 cup roughly chopped fresh flat-leaf parsley
Directions
- Step 1In a large bowl, whisk together the oil, vinegar, garlic, sugar, and 1/4 teaspoon each salt and pepper.
- Step 2Add the peas, tomatoes, bell pepper, and jalapeño and toss to coat; fold in the parsley.
