Ingredients
- 1 cup wheat berries
- 1 lb. seedless red grapes
- 6 sprig fresh thyme
- 1 Tbsp. olive oil
- kosher salt
- Pepper
- 1 bunch spinach
Directions
- Step 1Heat oven to 400 degrees F. In a medium saucepan, combine the wheat berries and 4 cups water and bring to a boil. Reduce heat and simmer, covered, until the wheat berries are tender, 60 to 75 minutes. Drain, rinse under colder water and transfer to a large bowl.
- Step 2Meanwhile, on a rimmed baking sheet, toss the grapes, thyme, oil, and 1/4 teaspoon each salt and pepper. Roast, tossing occasionally, until the grapes begin to burst, 15 minutes. Scatter the spinach over the grapes and roast for 2 minutes more. Gently toss until spinach is beginning to wilt. Fold mixture into the cooked wheat berries.
