Arugula and Pesto Pizzas

Ingredients
- 4 tortillas
- 8 Tbsp. refrigerated pesto
- 1 cup ricotta cheese
- 1/2 tsp. crushed red pepper
- 1/4 tsp. salt
- 1/4 tsp. Black pepper
- 1 cup shredded Italian-blend cheese
- 6 cups arugula
- 1 Tbsp. balsamic vinegar
Directions
- Step 1Preheat oven to 475 degrees F. Spray 2 cookie sheets with nonstick cooking spray. Arrange 2 tortillas on each sheet.
- Step 2Spread 2 tablespoons refrigerated pesto on each tortilla. In medium bowl, stir together ricotta cheese, crushed red pepper, salt, and black pepper; dollop onto tortillas.
- Step 3Top with shredded Italian-blend cheese. Bake 8 to 10 minute or until edges are golden brown and cheese melts.
- Step 4Toss arugula with balsamic vinegar. Top pizzas with arugula mixture.
