Name: Cod with Warm Tomato-Olive Salsa

Ingredients: 4 cod, flounder, or sole fillets; 1 tbsp. olive oil; 1/2 tsp. kosher salt; 1/4 tsp. Freshly ground black pepper; 1/2 lb. plum tomatoes; 12 pitted kalamata olives; 8 tbsp. shredded fresh basil; 1 tsp. grated lime zest; 2 tsp. fresh lime juice; Lime wedges; 2 tsp. olive oil; 1/4 tsp. kosher salt; 1/4 tsp. Black pepper; 6 oz. orzo or other tiny pasta; 1 tbsp. unsalted butter

Step 1Heat oven to 400 degrees F. Place fish in an ovenproof baking dish. Brush fillets with 1 tablespoon olive oil, then sprinkle with 1/2 teaspoon kosher salt and 1/4 teaspoon freshly ground black pepper.

Step 2In a medium bowl, combine tomatoes, olives, 2 tablespoons of the basil, lime zest and juice, 2 teaspoon olive oil, and 1/4 teaspoon each kosher salt and black pepper.

Step 3Bake fish 8 minutes. Spoon salsa over fish, then bake 2 minutes longer.

Step 4Meanwhile, cook orzo according to package directions. Drain and toss it with unsalted butter and 4 tablespoons of the basil.

Step 5Sprinkle fish with remaining basil. Serve with orzo and lime wedges.
