Savory Flounder

Dijon mustard deepens the delicate taste of flounder without being overpowering. Potatoes, broiled with the fish, come out already seasoned.

Ingredients
- 4 flounder fillets
- tsp. Pepper
- 2 Tbsp. Dijon mustard
- 1 cup potatoes
- Dill
Directions
- Step 1Place oven rack 6 inches from broiler heat source. Heat broiler on high.
- Step 2Place flounder fillets on jelly-roll pan. Sprinkle with pepper. Brush fillets with Dijon mustard. Spread potatoes on tops of fillets.
- Step 3Broil 3 to 4 minutes or until fish is firm and opaque throughout when tested with a fork. Garnish with dill.
