Add some spice to your after-holiday relaxation by using turkey leftovers in this dish with a southern kick.

Ingredients
- 3 cups green salsa
- 3 cups leftover cooked turkey
- 4 oz. lightly salted restaurant-style corn tortilla chips
- 1 cup low-fat sour cream
- 2 cups jalapeño Monterey Jack cheese
- 2 Tbsp. chopped fresh cilantro
Directions
- Step 1Heat oven to 425 degrees F. In a saucepan, heat 1 tablespoon canola oil over medium heat. Add salsa and heat to simmering.
- Step 2Spray a large, deep ovenproof skillet with cooking spray. Spread 1 cup of the salsa on bottom of skillet. Add 1 cup of the shredded turkey, 1/3 of the chips, 1/3 cup of the sour cream, and 2/3 cup of the cheese. Repeat with the remaining salsa, turkey, chips, sour cream, and cheese to make two more layers.
- Step 3Bake for 10 minutes, or until hot and cheese has melted. Top with fresh cilantro.
