Though delicious on their own, roasted potatoes flavored with fresh herbs like thyme, rosemary, and marjoram are a classic side that complements any main dish.

Ingredients
- 2 lb. russet potatoes
- 1/2 cup extra-virgin olive oil
- 1/4 cup extra-virgin olive oil
- salt
- Freshly ground pepper
- 1 Tbsp. fresh thyme
- 2 tsp. fresh thyme
- 1 Tbsp. marjoram
- 2 tsp. fresh marjoram
- 1 tsp. fresh rosemary
Directions
- Step 1Preheat oven to 450 degrees F. In a large bowl, toss potatoes with 1/2 cup oil; season with salt and pepper. Spread potatoes on a baking pan and roast for 30 minutes. Sprinkle with 2 teaspoons thyme, 2 teaspoons marjoram, and rosemary. Flip potatoes and roast 20 more minutes. Slice potatoes crosswise into 1/2-inch-thick rounds and transfer to a serving platter.
- Step 2Meanwhile, make herb oil: Finely chop remaining herbs. In a small bowl, combine herbs and remaining oil; set aside. Drizzle potatoes with herb oil.
