Kale Salad

This hearty winter salad is good for you, but its also tasty, thanks to a complex mix of diverse ingredients, like sticky-sweet dates, briny, salty olives and tart lemon.

Ingredients
Lemon Vinaigrette:
- 2 Tbsp. fresh lemon juice
- 2 Tbsp. extra-virgin olive oil
- tsp. salt
Kale Salad:
- 1 bunch kale
- 1/2 cup dates
- cup almonds
- 1/4 cup green olives
Directions
- Step 1Whisk together, in large bowl, fresh lemon juice, extra-virgin olive oil, and salt.
- Step 2Remove and discard stems and ribs kale. Very thinly slice leaves; add to bowl with lemon vinaigrette, tossing to coat. Let stand 10 minutes.
- Step 3Add dates, almonds, and green olives; toss to combine.
