Ingredients
- 3 large red onions
- 1 lb. pitted tart cherries
- 2 cups dry red wine (such as Chianti)
- 1 1/2 cups sugar
- 2 stick cinnamon
- 3 strip lemon zest
- 1/4 tsp. salt
Directions
- Step 1In a large pot over medium-high heat, bring all ingredients to a boil. Reduce heat to medium-low and simmer, stirring once or twice, until onions are deep red and cherries burst, 30 to 40 minutes. Set aside to cool.
- Step 2Transfer to a large glass jar and store, refrigerated, for up to 2 weeks. Serve with roast pork or poultry, or pair with goat cheese and crackers.
