Baked Kale Chips

Believe it or not, kale can be used to make crispy chips that the whole family will love. My kids were particularly skeptical the first time I tried serving them a batch, but now they love them almost as much as potato chips. It's one of those snack foods you can feel good about serving to your family.

Ingredients
- 1 bunch kale
- 2 Tbsp. extra-virgin olive oil
- kosher salt
Directions
- Step 1Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper.
- Step 2Tear the leafy part of the kale away from its rib and cut into bite-size pieces. Rinse it well and dry in a salad spinner. Discard the ribs. Transfer the kale to a mixing bowl and toss it with the olive oil.
- Step 3Spread the kale in a single layer on the baking sheet. Season it lightly with salt. Bake for 15 minutes, or until crispy.
