Ingredients
- 1 1/2 cups all-purpose flour
- 2 Tbsp. nonfat dry milk
- 1 tsp. fine salt
- 1 stick unsalted butter
- 1 1/2 cups coarsely grated cheese
Walnut-Parmesan Crackers
- 1/2 cup finely chopped walnuts
Gouda Crackers with Poppy and Sesame Seeds
- 2 Tbsp. poppy seeds
- 1 Tbsp. sesame seeds
- 1 Tbsp. kosher salt
- 1/2 Tbsp. garlic powder
- 1/2 Tbsp. onion powder
Chili-Cheddar Cornmeal Crackers
- 1/4 cup white cornmeal
- 2 tsp. chili powder
Directions
- Step 1In the bowl of a food processor, pulse flour, dry milk, and salt. Add butter and pulse until mixture resembles wet sand. Add cheese and pulse until combined. Drizzle in 4 to 6 tablespoons ice water, pulsing just until dough begins to come together.
- Step 2Roll dough into an 8-inch-long log. Divide dough into 2 equal-size logs, wrap both tightly in plastic wrap, and refrigerate for at least 3 hours.
- Step 3Preheat oven to 325 degrees F. Meanwhile, remove and unwrap 1 log. Using a wire cheese cutter, slice log into thirty 1/8-inch-thick rounds. Transfer to 2 parchment-lined baking pans (preferably insulated), spacing rounds about 1 inch apart.
- Step 4Bake until golden brown, 10 to 12 minutes, rotating pans halfway through. Transfer crackers to a wire rack to cool completely.
- Step 5Repeat Steps 3 and 4 with remaining log. To package, line the compartments of 4 boxes with parchment. Divide 1 batch among the boxes, placing 15 crackers in one compartment of each box. Repeat with batches of other variations.
- Step 6Assemble ingredients for basic cracker recipe. In Step 1, select Parmesan for cheese. Follow directions for basic cracker recipe above, but after Step 2, place finely chopped walnuts in a shallow bowl. In Step 3, lightly press 1 side of each round into walnuts before transferring, nut side up, to baking pans.
- Step 7Assemble ingredients for basic cracker recipe. In Step 1, select smoked Gouda for cheese. Follow directions for basic cracker recipe above, but after Step 2, in a shallow bowl, combine poppy seeds, sesame seeds, kosher salt, garlic powder, and onion powder. In Step 3, lightly press 1 side of each round into seed-spice mixture before transferring, seed side up, to baking pans.
- Step 8Assemble ingredients for basic cracker recipe. In Step 1, add white cornmeal and powder to dry ingredients, and select Cheddar for cheese. Follow directions for basic cracker recipe above.
