Pumpkin and Lentil Curry

Ingredients
- 2 Tbsp. gluten-free red curry paste
- 1 can coconut milk
- 1/2 cup water
- 8 oz. pumpkin
- 1 cup green lentils
Directions
- Step 1In a non-stick skillet, add the paste and fry over medium heat until fragrant. Pour in the coconut milk and water and mix to combine.
- Step 2Add pumpkin and lentils, bring to the boil, reduce heat, cover, and simmer for 25 minutes or until soft.
- Step 3Cover pan and leave to stand for 5 minutes before serving.
