Simmer lentils, butternut squash, green beans, red bell pepper and potato in a slow cooker with marinara sauce for this high-fiber, lowfat stew.

Ingredients
- 1 1/2 cups dried lentils
- 1 1/4 butternut squash
- 2 cups bottled marinara sauce
- 8 oz. green beans
- 1 medium red bell pepper
- 1 large all-purpose potato
- 3/4 cup chopped onion
- 1 tsp. minced garlic
- 1 Tbsp. olive oil
- Serve with: grated Parmesan cheese
Directions
- Step 1Mix lentils and 3 cups water in a 3-qt or larger slow-cooker. In a large bowl, mix remaining ingredients except olive oil; place on lentils.
- Step 2Cover and cook on low 8 to 10 hours until the vegetables and lentils are tender. Stir in the oil. Serve in soup plates or bowls. Pass Parmesan cheese at the table.
