Chicken-Sausage Stew

Apple cider and tomato paste form the base of this simple chicken stew, which gains flavor from smoky light kielbasa.

Ingredients
- 1 lb. skinless and boneless chicken thighs
- 1/4 tsp. salt
- 1/4 tsp. Pepper
- 4 oz. light kielbasa
- 4 stalk celery
- tsp. salt
- 2 cups cider
- 1 Tbsp. tomato paste
Directions
- Step 1Coat 12-inch skillet with nonstick spray; heat on medium-high. Sprinkle chicken thighs with 1/4 teaspoon each salt and pepper.
- Step 2Add to skillet along with kielbasa. Cook 5 minutes or until browned, turning. Add celery and 1/8 teaspoon salt. Cook 2 minutes, stirring.
- Step 3Add cider and tomato paste. Simmer on medium 15 minutes, stirring.
