Eggplant Hummus

This innovative twist on traditional hummus gets its flavor from a hearty eggplant puree. The eggplant is quickly steamed in the microwave in this recipe, but if you have time, you can also roast the eggplant in the oven for added depth of flavor.

Ingredients
- 1 eggplant
- 1 can chickpeas
- 3 Tbsp. fresh lemon juice
- 2 Tbsp. tahini
- 1 clove garlic
- 1/2 tsp. salt
- 1/2 tsp. Pepper
Directions
- Step 1Pierce eggplant all over with fork. Microwave, on plate lined with paper towels, on high 10 minutes or until very tender, turning over once. Cool. Cut in half; scoop flesh into food processor.
- Step 2Add chickpeas, lemon juice, tahini, garlic, and salt and pepper. Process until smooth. Cover; refrigerate until cold.
