Ingredients
- 3 egg whites
- 1 3/4 cups granulated sugar
- cup water
- 2 tsp. light corn syrup
- 2 tsp. vanilla extract
- 1 1/2 cups mini marshmallows
Directions
- Step 1Place about 3 inches of water in a very large pot and bring to a high simmer.
- Step 2Place the egg whites, sugar, 1/3 cup water, and corn syrup in a metal or glass bowl fitted over the pot of simmering water.
- Step 3Beat constantly with an electric mixer while over the boiling water until stiff peaks form, about 8 to 15 minutes. Remove from heat.
- Step 4Fold in the vanilla and marshmallows. Beat with the mixer on high until the marshmallows melt. Use as desired.
