
Carrot Cake Waffles with Cream Cheese Whipped Cream

Ingredients
- 1 cup Silvana's Kitchen Gluten-Free All-Purpose Flour
- 1 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. ground cinnamon
- 1/4 tsp. salt
- 1 cup light brown sugar
- 1/4 cup sour cream
- 4 Tbsp. unsalted butter
- 1 large egg
- 2 tsp. pure vanilla extract
- 2 medium carrots
- 1/2 cup walnuts
- 1 cup heavy cream
- 2 Tbsp. confectioners' sugar
- 1/4 cup whipped cream cheese
- warm maple syrup
Directions
- Step 1Preheat oven to 200 degrees F and set a rack in a rimmed baking sheet. In a medium bowl, whisk flour with baking powder, baking soda, cinnamon, and salt.
- Step 2In a large bowl, whisk brown sugar with sour cream, butter, egg, and 1 teaspoon of vanilla. Using a wooden spoon, stir in dry ingredients, then stir in carrots and walnuts.
- Step 3Preheat a waffle iron and brush with butter. Scoop 1/3 cup of batter into center of iron, spreading batter with the back of a spoon. Close iron and cook until waffle is deeply golden and crispy, about 5 minutes. Transfer waffle to rack in oven. Repeat with remaining batter.
- Step 4Meanwhile, in a medium bowl, using a handheld electric mixer, beat heavy cream at medium speed until soft peaks form. Reduce speed to low and beat in confectioners' sugar, cream cheese, and remaining 1 teaspoon of vanilla until firm peaks form.
- Step 5Serve waffles with whipped cream and maple syrup.
