Ingredients
- 1 cup Silvana's Kitchen Gluten-Free All-Purpose Flour
- 1/4 cup gluten-free oat flour
- 1 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 1 stick unsalted butter
- 3/4 cup light brown sugar
- 2 Tbsp. granulated sugar
- 1 large egg
- 2 tsp. pure vanilla extract
- 5 oz. semisweet chocolate
Directions
- Step 1Preheat oven to 350 degrees F. In a small bowl, whisk all-purpose flour with oat flour, baking powder, baking soda, and salt.
- Step 2In bowl of a standing electric mixer, beat butter with brown sugar and granulated sugar until small crumbs form, about 2 minutes. Beat in egg and vanilla. At low speed, gradually beat in flour mixture and chopped chocolate.
- Step 3Using a 1 3/4-inch scoop (#40) or a heaping tablespoon, arrange scoops of dough 2 inches apart on prepared baking sheets.
- Step 4Bake cookies for 12 to 14 minutes, until golden at edges. Let cookies cool for about 2 minutes, then transfer to a wire rack to cool.
