Cranberry Orange Rhubarb Popsicles

These creative little pops are packed with bold flavors, and can easily be made in quarter-pint mason jars — serve them right in the jars for a rustic-chic twist.

Ingredients
- 12 oz. rhubarb pulp (2 pounds of stewed rhubarb, drained for juice)
- 1 cup orange juice
- 1/2 cup fine-grain sugar
- 2 Tbsp. fine-grain sugar
- 2 Tbsp. tequila
- 1 Tbsp. lime juice
- 1 cup cranberries (frozen)
Directions
- Step 1Blend rhubarb pulp, orange juice, sugar, tequila, and lime. Add cranberries and process until mixture turns pink with bits of cranberry visible. Spoon into molds. Allow to freeze partially (about 1 hour) before adding popsicle sticks.
