Ingredients
- 1 cup diced carrots
- 1/4 cup chopped onion
- 2 Tbsp. chopped parsley
- 1/2 tsp. curry powder
- 1 tsp. olive oil
- 1 3-ounce veal cutlet
- 1 tsp. chopped rosemary
- salt
- Pepper
- 2 Tbsp. light sour cream
Directions
- Step 1Preheat oven to 375 degrees F. Mix carrots, onion, parsley, curry powder, and olive oil in a baking dish. Cover with aluminum foil and roast for 45 minutes.
- Step 2Meanwhile, season the veal with rosemary and salt and pepper, and grill or broil for about 10-15 minutes or as desired. Serve with sour cream.
