Ingredients
Maple Fried Apples
- 1/2 stick butter
- 6 Granny Smith apples
- 1/2 tsp. kosher salt
- 1/2 cup maple syrup
- 1 Tbsp. brown sugar
- 1 tsp. cinnamon
Pigs in a Blanket Pancakes
- 2 cups flour
- 1/2 tsp. kosher salt
- 4 tsp. baking powder
- 2 Tbsp. sugar
- 1 1/2 cups milk
- 2 eggs
- 4 Tbsp. melted butter
- 14 breakfast sausage links
Directions
- Step 1For the apples: In a large skillet over medium heat, melt butter. Once the butter is melted, add the rest of the ingredients, and cook for about 30 minutes or until the apples are tender and the liquid is absorbed.
- Step 2While apples are cooking, prepare the Pigs in a Blanket Pancakes.
- Step 3For pancakes: Preheat oven to 350 degrees F. Grease 7 (8-ounce) mason jelly jars, set aside. In a large bowl, whisk together the dry ingredients. In another bowl, whisk together the milk and eggs, then pour into dry ingredients, stir well, and stir in butter. Divide batter between the seven jars, a bit over 4 ounces in each jar. Push 2 sausage links down in each jar. Place jars on a sturdy jelly roll pan, and bake for 17 minutes or until a toothpick comes out clean. When baked, remove from oven and run a knife around each cake and dump out onto a plate. Slice each into 5 medallions and serve with Maple Fried Apples and maple syrup, if desired.
