Ingredients
- 1 good baguette
- olive oil
- salt
- Pepper
- 8 oz. good-quality camembert or other creamy cow’s milk cheese
- 1 cup fig preserves or macerated fruit such as huckleberries
- Sea salt
Directions
- Step 1Preheat oven to 425 degrees F. Brush olive oil onto a baking sheet. Cut baguette into 1/4-inch-thick slices, and arrange on baking sheet. Drizzle olive oil onto baguette, and season with a little salt and pepper. Bake for 3 to 4 minutes to toast the bread.
- Step 2Remove baguette toasts from the oven, and top each with a 1/4-inch-thick slice of cheese. Bake an additional 2 to 3 minutes, or until cheese is melted. Remove from oven, and spoon a small slice of preserved fig, or about 1 teaspoon fruit, onto each crostini. Finish with a small pinch of sea salt.
