
Lapsang-Maple Salad Dressing

Ingredients
- 1/4 cup balsamic vinegar
- 1/4 cup maple sryup
- 1 Tbsp. lapsang souchong tea leaves
- 1 clove garlic
- 1/2 tsp. Dijon mustard
- 1/2 tsp. salt
- 1/2 tsp. Freshly ground pepper
- 3/4 cup extra-virgin olive oil
Directions
- Step 1In a small saucepan, combine the vinegar and syrup. Bring to a boil, stir in the tea leaves, and remove from heat. Let sit for about 6 minutes. Strain, but do not press on the tea leaves. Discard the tea leaves.
- Step 2In a small bowl, whisk together the vinegar-syrup mixture, garlic, mustard, salt, and pepper. Add the olive oil in a thin, steady stream, whisking all the while to emulsify the dressing.
- Step 3Serve the dressing with greens as is or warmed to slightly wilt the greens.
