There are a few flavor combinations that immediately make me think of summer, but perhaps none of them are as nostalgic, or versatile, as coconut-lime. The creamy, sweet, nutty flavor of coconut is fantastic on its own, but when paired with the bright, tangy zip of lime, it really can’t be beat. The bright, tropical flavors invoke sunshine, sand, and surf, and work equally well in savory mains, fruity cocktails, or decadent desserts. To celebrate this tropical twosome, I gathered our 19 favorite coconut-lime recipes, perfect for any occasion.

When I think of coconut-lime, I think of summer, and when I think about summer, I think about cold cocktails. Luckily enough, we’ve got plenty of coconut-lime cocktails to last the whole summer long. Try our spiked coconut limeade or Dole Whip margaritas, or classics like a Bahama Mama or Miami Vice cocktail.

Thai food brings coconut-lime to the flavor palette in curries, soups, and really anything that uses coconut milk. Our coconut curry chicken, Thai chicken coconut soup, and chicken satay all pack in the tropical flavor if you're looking for a vacation-worthy weeknight dinner. The fun doesn’t stop there, though! Check out all of our favorite coconut-lime recipes from dinner, to drinks, and dessert.

This recipe is inspired by Thai Diner, the New York restaurant that famously marries American diner traditions with classic Thai street food. Though their chicken is made in the classic Milanese preparation, there is really something special about how the slightly-sweet coconut crust paired with the extra-coconutty chicken.

Coconut Curry Chicken

There are TONS of chicken curry recipes in the world. This version might be a little untraditional, but it’s still pretty darn tasty. Here I’m simmering chunks of chicken in a lightly spiced coconut sauce till they’re tender and cooked through, and then ladling that creamy sauce over freshly cooked rice.

I love a low-waste recipe, and these grain bowls are one I find myself reaching for often. Zero coconut milk goes to waste here. Some of it is used with fresh pineapple and lime juice to create a creamy and bright marinade, while the rest is used to cook the rice
