Summer may be ending, but our love of sun-dried tomatoes definitely isn't! A jar or bag of sun-dried tomatoes is the unexpected upgrade your pastas, soups, and one-skillet dinners will never be the same without. To all those people out there that say you can't get a good tomato after August certainly haven't tried all of these 20 sun-dried tomato recipes, that's for sure.

Our love of sun-dried tomatoes started when we discovered just how good oil-packed jars of sun-dried tomatoes can be. A drizzle of the oil will have you convinced that it's liquid gold. As the tomatoes dry, the fruity and savory flavor of the tomatoes concentrates and becomes slightly caramelized, which adds tons of flavor to the oil it's packed in. That same oil is key for the wildly good sauce we use for our recipes for sun-dried tomato pasta, one-pan creamy sun-dried tomato chicken and gnocchi, and creamy penne with sun-dried tomatoes and sausage. If you can't get enough, you'll definitely want to keep a batch of our sun-dried tomato pesto on hand at all times.

If you've run out of sun-dried tomatoes (or simply bought too many at the farmers' market or your tomato plant was extra productive this year), you can even make sun-dried tomatoes at home. We LOVE having those on hand for everything and anything. Stir them into your fettuccine Alfredo, slice them and add them to your caesar salad, or just snack on 'em plain!

Sun-Dried Tomato Pasta

Normally, you discard the oil left behind in the jar of sun-dried tomatoes, but this recipe takes advantage of it. We simmer the garlic and onion in all of the oil—depending on the brand, it will be anywhere from 1/2 to 3/4 cup. This process slowly cooks the aromatics until they’re soft and sweet, almost as if we’d caramelized them for hours.

Sun-Dried Tomatoes

We LOVE having these flavorful sun-dried tomatoes on hand. Stir them into your fettuccine Alfredo, slice them and add them to your caesar salad, or just snack on 'em plain! Kept in a resealable plastic bag (don't forget to get all the air out), these will last up to 6 months in the freezer! That way, you can have a taste of summer long past August.
