It's easy to say that Thanksgiving might be known as THE pie holiday, but we’re here to remind you, pies are just as lovely all winter long. And while Christmas cookies are great, but there’s something extra special about a pie, particularly around the holidays. Not only are they wonderful for sharing, they also make an impressive dessert centerpiece and are achievable whether you’re a kitchen novice or a master baker. We’ve got 30 recipes to help inspire you to make a pie this holiday season—one for all 25 days of Christmas, and then some.

Don’t be intimidated by the word pie, either. If you want nothing to do with pie dough, pie weights, or finicky fillings, not to worry. We’ve included a number of no-bake, easy recipes so you too can get in on the pie game this holiday season. Ask your average American what a mince pie is, and they’ll likely wonder if you were talking about shepherd’s pie. Ask a Brit? Nothing screams holiday more than a classic pecan pie. The craggy, crunchy top gives way to that delicious, rich interior FULL to the brim of nuts. Southerners know a thing or two about decadent desserts, and this retro pie is everything you want in the millionaire experience—crunchy, sweet, mile-high, and make-ahead. Traditionally million-dollar pie is a no-bake icebox treat. It’s prepared by pressing a graham cracker crust into a pie plate and piling it high with a rich whipped topping base filled with pecans, coconut, and crushed pineapple. Frozen Peppermint Pattie Pie

This pie is the frozen version of a York Peppermint Pattie, and there is something so refreshing about a frozen minty dessert that is impossible to resist. This pie is quick to make and takes a note from our no-churn ice cream with the addition of cream cheese to make it more sliceable. The chocolate ganache on top stays slightly soft even after re-freezing for a very satisfying slice and bite.

Chocolate Pie

Though most chocolate pies use an Oreo crust, we went for a buttery flaky crust with just a hint of bittersweet cocoa instead. The filling here is a decadent and foolproof custard made extra easy by being covered in a slightly sour (trust us) whipped cream that will cover any cracks. Top with some shaved chocolate for a richer than rich chocolate pie everyone will love this Christmas.

Our version of lemon icebox pie (itself a riff of Key lime pie) calls for an extra-buttery graham cracker crust that’s first partially baked before the filling is poured in. Why bake the crust? We’ve found that pre-baking the crust gives the pie a jumpstart on caramelization—and caramelization is a good, tasty thing.
