Pumpkin Soup

Pumpkin soup in the fall is something that never gets old. It's healthy, super-creamy, and keeps you cozy. You can use various winter squashes to make this soup, but our top two favorite types are sugar pumpkins and kabocha squash, with calabaza and butternut squashes as runner-ups. Some squashes will take longer than others to cook, so be sure to keep the simmer going until the squash is completely softened and fork-tender for the creamiest soup texture.

This vegetarian soup can (and should!) be enjoyed year-round. It has a perfect balance between sweet, smoky, and spicy. The ruby red beets add sweetness and a mellow, earthy flavor. Potatoes help thicken the soup and add body without including any extra dairy or gluten, while the harissa paste adds a peppery kick. If you like things spicy, use a harissa paste labeled as such. If not, use a jar labeled “mild.”

Beyond its incredible taste, what makes this recipe truly great is its ease and adaptability. Alongside pantry staples of potatoes, beans, and lemons, you can switch up the herbs to match the season—rosemary in winter or parsley and dill in spring. But don’t skip the Parmesan rind; it adds a subtle nuttiness and salty richness to the broth (we always keep a couple stashed in the freezer for this purpose).

Tomato Soup

PHOTO: RACHEL VANNI; FOOD STYLING: LENA ABRAHAM

There's really nothing more comforting than a steaming hot bowl of tomato soup. We prefer using canned tomatoes rather than fresh because they tend to be packed in peak season—that means they're perfectly ripe! PLUS, the skins are removed. That means less work for you! If we were you, we'd serve this with our antipasto grilled cheese—makes for a complete (and extra-hearty) meal.
