Alright, we have to admit we are guilty as charged, because every fall we always have at least one (or three, four, five...) leftover cans of pumpkin puree hanging around. While we can't get enough of pumpkin-everything, we hate wasting a can after we make all those pumpkin pies and pumpkin bread. So if you've had your fill of pies but still want to keep the autumnal vibes going strong, these 30 genius recipes (like pumpkin lasagna, pumpkin cream cheese muffins, and pumpkin soup) will more than take care of your pumpkin puree stash. You just might wish you had a few more cans of pumpkin!

We love canned pumpkin, don't get us wrong. It's easy, versatile, and doesn't involve carving a whole pumpkin. But when you really want to nail that signature pumpkin flavor, you can't get any closer than making your own pumpkin puree. Sugar pumpkins are our go-to for making pumpkin puree, but you can also use sweet kabocha squash in a pinch.

Start your day off with a pumpkin spice latte, then end it with a pumpkin pie martini, because why shouldn't you?! Your favorite seasonal latte is so easy to re-create at home, thanks to our pumpkin spice syrup. If you really want to go over the top with pumpkin flavor, pair it with our pumpkin biscuits.

Fall is magical not only because of Halloween, but because it's a truly magical time for all things squash. If you've made your way through all of our pumpkin recipes, you'll have to try all of our butternut squash recipes and winter & fall squash recipes. If you need to find us, you can catch us roasting up delicata squash and acorn squash all season long.

In the fall, we go wild for all things pumpkin. But it’s not just for treats, pumpkin is also wildly good in savory recipes. For this gnocchi dish, we use pumpkin puree to build a sauce that has a touch of tomato and is similar to a marinara in texture. Just like with butternut squash or sweet potatoes, pumpkin pairs beautifully with sage and sausage, so they were natural additions to the gnocchi and sauce.

Pumpkin cheesecake is the prima donna of all the holiday desserts: Rich, decadent, and always a bit over the top, she stops the show wherever she goes. In that spirit, a lot of pumpkin cheesecake recipes pile on loads of flavored garnish and décor (caramel! nuts! crazy whipped cream piping!); but for this, our forever favorite version, we’ve stripped it right back and returned the focus to its true essence: a thick, crunchy crust, and a super-creamy, super-pumpkin-y filling.
