Ingredients
- 1 cup
cold butter, cubed
- 1 cup
brown sugar
- 1 cup
granulated sugar
- 2
eggs
- 2 tsp.
pure vanilla extract
- 2 3/4 cups
all-purpose flour
- 3 Tbsp.
cornstarch
- 1 tsp.
baking powder
- 1/2 tsp.
salt
- 1 cup
mini semisweet chocolate chips
- 1 cup
semisweet chocolate chunks, divided
Directions
1. Prep Baking Cups: Preheat oven to 350°F. Place nine 4" shallow paper baking cups on a large baking sheet.
2. Cream Butter: In the bowl of a stand mixer fit with a paddle attachment, beat butter and sugars for 3 minutes, until fluffy.
3. Add Wet Ingredients: Add eggs and vanilla and mix until blended.
4. Mix Dry Ingredients: In a medium bowl, whisk flour, cornstarch, baking powder, and salt to combine. Slowly add to the mixing bowl, beating on low speed, until flour is incorporated.
5. Add Chocolate: Add mini chocolate chips and 1/2 c. of chocolate chunks until chocolate is evenly distributed. Do not overmix.
6. Divide Dough: Place 1/2 c. of dough into reserved baking cups, gently pressing dough into the bottom of each one.
7. Top With Chocolate: Evenly divide the remaining 1/2 c. of chocolate chunks among cookies and press into the top of the cookies.
8. Bake Cookies: Bake until golden brown, 20 to 22 minutes. Cool for 5 minutes, then transfer to wire cooling racks.
