I call these emergency cookies. I can whip these up with almost zero planning or preparation. Depending on what I have in the pantry, they become chocolate peanut butter cookies, with the addition of chocolate chunks. Or, a few marshmallows are pressed in the tops of the cookies. But seriously, they are just as good plain.

Ingredients
- 1/2 cup creamy peanut butter
- 5 Tbsp. granulated sugar
- 1 large egg
- Handful of mini marshmallows (optional)
- Handful of chopped semisweet chocolate (optional)
Directions
- Step 1Preheat the over to 350 degrees F.
- Step 2Place the peanut butter, sugar, and egg in a medium-size bowl. Stir until well combined. Drop by heaping tablespoons spaced 2 inches apart onto an ungreased baking sheet.
- Step 3Press mini marshmallows or chocolate chunks into the surface of the cookies, if desired.
- Step 4Bake for 10 to 11 minutes, or until the edges are slightly browned. Let cool on the baking sheet for 3 minutes before moving to a cooling rack to cool completely.
