Whether you’re obsessed with bacon, egg, and cheese sandwiches or just love the convenience of a good breakfast casserole, this is the dish you need to try. It takes the deli classic and makes it even more decadent but with no added stress, thanks to simple ingredients like American cheese, canned biscuits, and mostly hands-off cooking. When you and your whole crew need the comfort of a BEC, this dish will be a life-saver.
This casserole has everything you love about the sandwich, like layers of bacon and eggs, while shredded mozzarella AND American cheese slices turn the whole thing silky and almost soufflé-like. The biscuits make it a complete meal, staying buttery and crisp on top, and soft and dumpling-esque on the bottom. They also mean it’s extra easy to serve—just cut into squares around the biscuit rounds for 8 straightforward servings.
Have leftovers? They’ll keep for up to 2 days. Store in an airtight container and refrigerate. Reheat in the oven to warm back up.

Ingredients

slices bacon
- 10
large eggs
- 1 1/2 cups
milk
- 1 cup
shredded mozzarella
- 1/4 cup
finely sliced chives
Pinch of crushed red pepper flakes
- 3/4 tsp.
kosher salt
- 1/2 tsp.
freshly ground black pepper
Cooking spray
- 8
slices American cheese
- 1
(16.3-oz.) tube biscuit dough
- 2 Tbsp.
unsalted butter, melted
Directions
- Step 1Arrange a rack in center of oven; preheat to 375°. Arrange bacon in a single layer on a foil-lined baking sheet. Bake until golden and crispy, 20 to 25 minutes.
- Step 2In a large bowl, whisk eggs and milk until combined. Add mozzarella, chives, and red pepper flakes; season with salt and black pepper.
- Step 3Grease a 13" x 9" baking dish with cooking spray. Pour egg mixture into prepared dish. Lay bacon across the top in a single layer. Top with American cheese, then place a biscuit on top of each slice of cheese. Brush tops of biscuits with some butter; reserve remaining butter.
- Step 4Bake casserole until biscuits start to turn golden, about 20 minutes. Loosely cover with foil and continue to bake until center looks set and biscuits are golden brown, 20 to 25 minutes more.
- Step 5Uncover casserole and brush biscuits with remaining butter. Let cool 10 minutes before slicing.
