Hey there Easter heads! Thinking about what to do with all those extra Peeps you have lying around? I got you. This playful Easter mashup combines the classic fluffy, fried, golden sopapilla with a marshmallowy Peep center. Serve them hot and sprinkled with colored sanding sugar to complete the Easter look, and I promise—even Peeps haters won't be able to resist.
The sopapilla, a fried pastry typically sprinkled with cinnamon sugar or honey, is a simple but delicious dessert with both Spanish and Native American origin. It's everything that is good about fried dough—golden brown, fluffy, and melt-in-your mouth sweetness that will have you reaching for another before you’ve finished the first. The melty Peep center adds a perfect oozy, sweet center to an already mouthwatering dessert, creating a perfect dessert mashup that will outshine any Easter basket.

Ingredients

(8-oz.) tubes crescent roll dough
- 8
Peeps in assorted colors
- 3 Tbsp.
blue, pink, and yellow sanding sugar
- 3/4 cup
(150 g.) granulated sugar
- 2 1/2 cups
canola or vegetable oil
Directions
- Step 1Spread a sheet of dough on a large work surface. Pinch together seams and press dough to a 12" x 8" rectangle. Repeat with remaining dough.
- Step 2Cut both rectangles into 8 (4" x 3") squares for 16 total. Arrange a Peep in the center of 8 squares. Cover each Peep with another square of dough and press down on all sides to enclose. Transfer Peeps to a baking sheet.
- Step 3Pour sanding sugar into 3 separate bowls. Mix 1/4 cup granulated sugar into each color until incorporated.
- Step 4Pour oil into a large, heavy pot and heat over medium-high heat until an instant-read or deep-fry thermometer registers 375°. Working 2 at a time, fry Peeps, turning halfway through, until deeply golden brown on both sides, about 30 seconds total. Using tongs, return to baking sheet.
- Step 5While still hot, using tongs, dip Peeps into sanding sugar to coat all sides. Arrange on a platter.
