Air Fryer Baklava Granola

Granola is the ultimate salty-sweet and crunchy snack for any time of day. This version of the staple snack food has all of the flavors you’d find in a crispy and syrupy square of baklava—pistachios, walnuts, and plenty of sticky-sweet honey. It all comes together in an air fryer and takes a fraction of the time to cook than it would in an actual oven. In short, a quick and easy breakfast has never tasted so good.
Sprinkle it on a smoothie bowl for breakfast, grab a few handfuls for the mid-afternoon slump, or pile it on a bowl of your favorite sorbet for dessert. My favorite way to enjoy this air fryer baklava granola is on a bowl of yogurt with orange slices, pomegranate seeds, and an extra drizzle of honey.
Once the granola is completely cooled, store any leftovers in an airtight container for up to 2 weeks.

Ingredients
- 1 cup
old-fashioned oats
- 1/2 cup
chopped raw walnuts
- 1/3 cup
honey
- 3 Tbsp.
coconut oil, melted
- 1 tsp.
ground cinnamon
- 1/2 tsp.
kosher salt
- 1 cup
chopped roasted pistachios, divided
Directions
- Step 1In a large bowl, combine oats, walnuts, honey, oil, cinnamon, salt, and 3/4 cup pistachios.
- Step 2Line an air fryer basket with a small piece of parchment, leaving some of the vent holes in the basket exposed. (You can also use an air fryer basket liner.) Add oat mixture in a single layer.
- Step 3Cook oats at 325°, stirring halfway through, until deep golden brown and mixture is fragrant, 15 to 18 minutes. Stir in remaining 1/4 cup pistachios. Let cool in air fryer 15 to 20 minutes.
- Step 4Break into small pieces. Granola will harden as it continues to cool. Transfer to an airtight container and store up to 2 weeks.
