Here at Delish, we love Buffalo chicken dip. When I say love, I mean eat-it-for-dinner-with-nothing-else obsessed. There’s no shame in a hearty dip for dinner in my book, but if you need a good excuse to enjoy your favorite warm dip without any shame, then let me introduce Buffalo chicken’s new best friend: grilled cheese. This combination is not only ridiculously good, but it’s so easy to make, you’ll wonder why you haven’t been turning your favorite dip into sandwich form all this time. Whether you’re looking for a game day dinner or a post-Super Bowl snack to use up your leftovers, this grilled cheese is a game-changer.
We create an easy Buffalo chicken dip in this recipe by combining rotisserie chicken, cream cheese, Buffalo sauce, and shredded white cheddar (or Monterey Jack). The result is a Buffalo chicken mixture that has all the flavors you know and love, but is substantial enough to hold its own in a sandwich. Simply pile between slices of bread and toast, and dinner is served in just 10 minutes.
