The star flavor of the passion fruit juice adds a tart zippiness that’s balanced lovingly with a warm vanilla simple syrup and a bright bubbly side car of club soda. Ingredients
Vanilla Simple Syrup
- 1/2 cup
(100 g.) granulated sugar
- 1/2 cup
water
- 1 Tbsp.
pure vanilla extract
Mocktail
- 4 oz.
passion fruit juice
- 1 Tbsp.
passion fruit seeds
- 1/2 oz.
fresh lime juice
Ice
- 4 oz.
club soda
- 1
slice passion fruit
Directions
Vanilla Simple Syrup
- Step 1In a small pot over medium heat, bring sugar and water to a simmer. Cook, stirring frequently, until slightly reduced and sugar is dissolved, 5 to 7 minutes.
- Step 2Stir in vanilla until heated through. Let cool.
- Step 3Make Ahead: Syrup can be made 1 month ahead. Store in an airtight container and refrigerate.
Mocktail
- Step 1In a cocktail shaker, combine passion fruit juice, passion fruit seeds, lime juice, and 1/2 oz. vanilla simple syrup. Fill shaker with ice, cover, and vigorously shake until outside of shaker is very frosty, about 20 seconds.
- Step 2Double strain into a coupe glass. Top off with club soda. Garnish with passion fruit slice.
