Sticky toffee pudding is synonymous with the U.K., but here at Delish, we love a classic dessert that has been turned into a blondie. These are similar to the cake they were inspired by, but are a chewy, handheld bar instead of a soft cake. Dates are often blended into the cake to add sweetness, but I opted to chop them and leave little pieces in for a bit of texture. It makes the blondies even chewier, which I loved. The toffee sauce is really easy to make and requires just a quick boil. Once the sauce is golden and thick, you can drizzle it over the blondies, then top it with some flaky sea salt to give that salted caramel vibe.
Another plus is that the blondies are better to make ahead of time than the cake would be, making them a great option to serve at a holiday party. Just wait to make the toffee sauce until the same day you plan to serve them. The blondies can be made up to 1 day ahead and stored in an airtight container.

(180 g.) Medjool dates
- 1 cup
(215 g.) packed dark brown sugar
- 3/4 cup
(1 1/2 sticks) unsalted butter
- 1
large egg
- 1 tsp.
pure vanilla extract
- 1 1/2 cups
(180 g.) all-purpose flour
- 1/2 tsp.
kosher salt
Toffee Sauce
- 1/4 cup
heavy cream
- 2 Tbsp.
dark brown sugar
- 2 Tbsp.
unsalted butter
Flaky sea salt
Directions
Blondies
- Step 1Arrange a rack in center of oven; preheat to 350°. Line an 8" x 8" baking pan with parchment, leaving an overhang on 2 opposite sides. Grease parchment with cooking spray. Cut a slit into dates and remove pits and stems, then finely chop dates.
- Step 2In a small saucepan over medium heat, cook dates, brown sugar, and butter, stirring often, until combined and dates have softened, 5 to 8 minutes. Transfer to a medium bowl and let cool to room temperature, at least 10 minutes.
- Step 3Add egg and vanilla and whisk until combined. Add flour and kosher salt and mix until just combined. Pour into prepared pan and smooth in an even layer.
- Step 4Bake blondies until center feels slightly firm to the touch, 25 to 30 minutes. Let cool.
Toffee Sauce
- Step 1In a small saucepan over medium heat, cook cream, brown sugar, and butter, stirring often, until thickened and a loose caramel consistency forms, about 5 minutes. Let cool slightly.
- Step 2Using parchment overhang, lift out blondies and transfer to a cutting board. Drizzle with toffee sauce. Sprinkle with sea salt. Cut into squares.
