When the weather gets cold, your dinner making-mojo is low, or when comfort food is just what’s on the menu, you need a casserole. Even though I have loved so many other casseroles before, there's always room in my baking dish for one more. And if that casserole is easy, creamy, chicken-y, and cheesy? With a crunchy topping? My oven is already preheating.
Sometimes called a million-dollar casserole, this chicken casserole is an absolute winner. The creamy no-cook sauce is whisked together in a bowl, and if you use scissors to slice the chives, you don’t even need to pick up a knife. Cooked, shredded chicken and thawed frozen peas are stirred in. Before baking, the chicken filling is topped with shredded cheddar and buttery, crushed Ritz crackers.
What’s more, this casserole is just as adaptable as it is delicious. You can use cooked turkey instead of chicken. You can add cooked broccoli or greens, thawed frozen mixed vegetables, or skip veggies entirely. Out of cheddar? Shredded pepper jack, mozzarella, or Parmesan would all work too.

Ingredients
Cooking spray
- 1
(10.75-oz.) can condensed cream of chicken soup
- 3/4 cup
(4%) cottage cheese
- 3/4 cup
sour cream
- 1/4 cup
sliced chives
- 3/4 tsp.
garlic powder
- 1/4 tsp.
cayenne pepper
- 4 cups
cooked shredded chicken
- 1 cup
frozen peas, thawed
Freshly ground black pepper
- 1/2 cup
shredded cheddar

Ritz crackers (from 1 sleeve), crushed (about 1 1/3 c.)
- 3 Tbsp.
unsalted butter, melted
Chopped fresh parsley, for serving (optional)
Directions
- Step 1Preheat oven to 400°. Lightly grease an 11" x 8" baking dish with cooking spray. In a large bowl, whisk soup, cottage cheese, sour cream, chives, garlic powder, and cayenne until smooth. Fold in chicken and peas; season with black pepper. Transfer to prepared baking dish and smooth in an even layer. Top with cheddar.
- Step 2In a medium bowl, combine cracker crumbs and butter. Sprinkle over cheese.
- Step 3Bake casserole until browned and bubbling, 25 to 30 minutes.
- Step 4Let stand 5 minutes. Top with parsley (if using).
