Lemon, Lime, & Bitters Tom Collins

If you’re from or have visited Australia, you’ll know that nothing quite cures the heat of a hot summer day like an LLB, aka a lemon, lime, and bitters. If you’re unfamiliar, get ready: this few-ingredient, low-ABV cocktail (bitters do have a high alcohol content, but you use so little it’s negligible) is about to become your new favorite. I love it so much, I thought—what could improve it? Trust me when I say, it gets even better by turning it into a Tom Collins. It’s quite simple to do, AND makes the drink even more refreshing. One sip and you’ll be transported to the beach in Queensland.
This drink was inspired by one of my favorite gin brands from Australia—Four Pillars—and childhood memories of drinking an LLB with my parents. The citrus from the lemon and sweetness from the lime really complement the gin for this twist on a classic. It’s then topped off with Sprite for a refreshing splash of bubbly (and to make it more like the refreshing lemonade I grew up with—in the UK and Australia it’s typically carbonated!). The bitters are another main component, and everyone has their preference on how much to add, be it a couple drops or double that! I know how I like it—just enough dashes so it sits pretty on the top floating down—but you do you.

Ingredients
- 1 1/2 oz.
Four Pillars gin
- 1 oz.
fresh lemon juice
- 1 oz.
lime cordial/simple syrup
Ice
Sprite, for topping off
2 to 4 dashes Angostura bitters
- 1
lime wheel
Directions
- Step 1In a cocktail shaker, combine gin, lemon juice, and lime cordial. Fill shaker with ice, cover, and vigorously shake until outside of shaker is very frosty, about 20 seconds.
- Step 2Fill a Collins glass with ice (preferably block ice) and strain drink into glass. Top off with Sprite. Splash a few dashes of bitters on top to float. Garnish with lime wheel.
