I love a grocery store shortcut just as much as the next home cook, but some things are just wayyy better made from scratch, like this tart and sweet easy stovetop applesauce. Although it’s usually thought of as a kids-only food, I go through a ton of this high fiber snack, and the store-bought version pales in comparison to the taste of fresh apples.
My homemade applesauce calls for a mix of sweet and tart apples cooked with a little water, apple cider vinegar, and cinnamon until they’re soft enough to blend until smooth. The process is pretty straightforward, but what sets this recipe apart is the mix of apples. The ones I choose have just the right blend of sweetness, tartness, and firmness making this applesauce super-versatile and irresistible.
Place a 5- to 6-qt. Dutch oven or heavy-bottomed pot over medium heat. Combine the apples, water, sweetener (if using), apple cider vinegar, salt, and cinnamon (if using) in the pot. Cover and cook for about 25 minutes, testing as you go. The best way to tell if the apples are ready is to try a piece (or two)! If there’s any crunch or resistance, they need more time. Cook for another 5 minutes and try again.
Now it's time to reduce the liquid, which should take 8 to 10 minutes more. Be sure to stir the apples occasionally to make sure they continue to cook evenly.
Transfer the warm cooked apples and any remaining liquid to the bowl of a food processor. Process for 1 to 2 minutes or until you achieve a smooth sauce. A few chunks are okay, but if you want zero chunks, blend the cooked ables in a blender instead of a food processor.
Let cool to room temperature, then transfer to an airtight container and refrigerate until ready to serve.

Storage
Store the cooled applesauce in an airtight container for up to 1 week in the refrigerator or 3 months in the freezer. To thaw frozen applesauce, place the container in the refrigerator overnight.
