
I’m calling it now: Banana boats are making a comeback this summer. This low-lift, delicious dessert comes in endless variations while being easy enough to get the kids in the kitchen—or around the campfire—to help. Simply split the banana down the middle, stuff it with your dream selection of toppings, wrap it in foil, and toss it in the oven, on the grill, or in a campfire until the inside is soft and perfectly sweet. Ripe bananas have a ton of flavor matches and for my ultimate combos, I chose s’mores, banana split, and bananas Foster, but I encourage you to try a different combination every time you make this. Just remember to save crispy-crunchy toppings (like toasted coconut, graham cracker crumbs, cookie crumbs, etc) for sprinkling on the bananas when they come out of the oven. semisweet chocolate chips, divided
- 4 Tbsp.

Banana Split
- 2
large strawberries, finely chopped, divided
- 4 Tbsp.
semisweet chocolate chips, divided
- 4 Tbsp.
toasted walnuts, divided
Whipped cream and maraschino cherries, for serving
Bananas Foster
- 1/2 cup
chopped toasted pecans
- 6 Tbsp.
dark brown sugar
- 1/4 cup
dark rum
Directions
S'mores
- Step 1Preheat oven to 350°. Cut out 4 (14" x 12") rectangles of foil.
- Step 2Using a paring knife, make a long slit in each banana lengthwise without cutting through the skin on the other side. Place a banana in the center of a sheet of foil. Fill banana with 1 Tbsp. marshmallows and 1 Tbsp. chocolate chips. Crimp foil around banana to seal with seam facing up. Repeat with remaining bananas and filling. Transfer wrapped bananas to a baking sheet.
- Step 3Bake banana s’mores until chocolate has melted, 10 to 12 minutes.
- Step 4Turn on broiler. Unwrap foil and broil bananas, watching closely, until lightly browned, 30 to 60 seconds.
- Step 5Top bananas with graham cracker crumbs.
Banana Split
- Step 1Preheat oven to 350°. Cut out 4 (14" x 12") rectangles of foil.
- Step 2Using a paring knife, make a long slit in each banana lengthwise without cutting through the skin on other the side. Place a banana in the center of a sheet of foil. Fill banana with one-quarter of strawberries, 1 Tbsp. chips, and 1 Tbsp. walnuts. Crimp foil around banana to seal with seam facing up. Repeat with remaining bananas and filling. Transfer wrapped bananas to a baking sheet.
- Step 3Bake banana splits until warmed through and bananas have softened, 10 to 12 minutes.
- Step 4Unwrap and top bananas with whipped cream and maraschino cherries.
Bananas Foster
- Step 1Preheat oven to 350°. Cut out 4 (14" x 12") rectangles of foil.
- Step 2In a medium heatproof bowl, microwave pecans, brown sugar, and rum in 15-second increments, stirring between each, until bubbling and thick, about 2 minutes total.
- Step 3Using a paring knife, make a long slit in each banana lengthwise without cutting through the skin on the other side. Place a banana in the center of a sheet of foil. Fill banana with one-quarter of pecan sugar mixture. Crimp foil around banana to seal with seam facing up. Repeat with remaining bananas and filling. Transfer wrapped bananas to a baking sheet.
- Step 4Bake bananas Foster until warmed through and bananas have softened, 10 to 12 minutes.
