Ingredients

head of leafy greens of your choice, such as romaine, radicchio, endive, or butter lettuce
- 1 tsp.
cornstarch
- 1 tsp.
sugar
- 1 tsp.
red-pepper flakes
- 1 tsp.
freshly ground black pepper, plus more to taste
- 2 Tbsp.
tamari
- 1 Tbsp.
toasted sesame oil
- 2 Tbsp.
extra-virgin olive oil

clove garlic, minced
- 1
(1-inch) piece ginger, peeled and minced
- 1
carrot, peeled and cut into ¼-inch cubes
- 1
(8 oz.) can whole water chestnuts, drained and cut into ¼-inch cubes

mixed mushrooms (such as cremini, shiitake, and oyster), cut into ½-inch pieces

Thai chiles, thinly sliced
- 1/2 cup
roasted unsalted peanuts, roughly chopped
- 1/4 cup
thinly sliced scallions
Kosher salt, to taste
Lime wedges, for serving

Directions
- Step 1Separate the leaves of the greens. Rinse and dry; set aside.
- Step 2In a small bowl, stir together cornstarch, sugar, red-pepper flakes, black pepper, tamari, sesame oil, and ⅓ cup cold water; set aside.
- Step 3Heat the olive oil in a large nonstick skillet over medium heat. Add the garlic, ginger, carrot, and water chestnuts. Sauté, stirring occasionally, until the vegetables are slightly softened, about 3 minutes. Add the mushrooms in an even layer and cook, undisturbed, for 4 minutes, or until lightly browned. Add the Thai chiles and cook for another 2 minutes. Remove the pan from heat and pour in the cornstarch mixture, stirring well to incorporate. Season with salt and pepper.
- Step 4Transfer to a bowl and top with chopped peanuts and sliced scallions. Serve inside lettuce leaves with lime wedges on the side, alongside Athletic Brewing Upside Dawn.
